1. Use the right type of flour

  • The flour you use for making a pizza crust has a big impact on your end result. Most people use all-purpose flour because it typically costs less than other types of flour at the store, but high-protein bread flour provides the best results when making a pizza crust that has the perfect crispy-chewy combination.

2. Measure flour by weight, not volume

  • The worst way to measure flour is by using a measuring cup. When measuring flour for your pizza crust, use a scale. A scale eliminates all the guesswork involved with mixing the correct amount of flour in your dough.
  • Since flour becomes compressed, a measuring cup is an inaccurate way to measure. When you measure by weight instead of volume, you'll end up with the correct amount of flour every time, no matter how compressed it may be.

3. Refrigerate the dough

  • If you desire a perfectly browned, flavourful pizza crust, allow your dough to cold-ferment in the refrigerator. 4. Bake at high heat on a low rack

A hotter oven temperature allows vapour pockets to form and expand in the crust, resulting in a deliciously airy crust full of air bubbles. Crank up your oven to its highest heat setting when baking a pizza.
  • It's also important to preheat the oven with your pizza stone or pan on the lowest oven rack. This way, the pizza will brown better and cook more evenly. Remember, the hotter the pan, the crispier your crust will be.
