Magnolia started the cupcake craze, and Dominique Ansel upped the ante with the cronut; will Montrealer Juliano Ciccocioppo do the same with the doughnut? All eyes are on the humble pastry, which in recent years has been dressed up in different ways and re-popularized throughout the city’s cafés and foodie hotspots. “Doughnuts have been one of my favourite treats ever since I was a child. So my goal is to make Trou de beigne the Saint-Viateur Bagel of doughnuts, its artisanal incarnation," explains Juliano.
The famous bagel shop’s reputation was not built overnight, so Juliano spares no effort creating new flavours and ever-more surprising doughnuts in the hopes of his own business earning the same monumental status.
“Our most popular doughnut is without a doubt our maple bacon flavour. It’s a plain doughnut with maple icing, topped with a slice of bacon fried in maple syrup – simply sinful! The Blizzard is also quite popular: it’s a chocolate doughnut coated in Lindt white chocolate and Oreo,” he explains, proof of Trou de beigne's unbridled creativity.
