“Robert sits on international spirit and wine tasting panels. “What really segregates and defines our spirits is that in striving for a clean pure spirit, we’re very, very defined on what we’re gathering during our distillation. Our margins are very narrow,” Lisa explains. Refusing to compromise taste for a more cost-effective product, The Liberty Distillery selects only the purest portions of its spirits for further distillation, resulting in smooth, full-bodied flavours and unmistakable quality.
The Liberty Distillery is a relatively new addition to the Vancouver distilling scene, but its spirits and space take a page or two from the city’s historic heritage. Handcrafted, premium spirits (including gins, whiskeys and vodkas) can be tasted and purchased on site at the 110-year-old saloon bar. This Granville Island destination has good genes, too: its sister company, Liberty Wines, is known for an exceptional selection of wines and knowledgeable staff, which have earned it a devoted customer base.
While walking into Granville Island’s new distillery may feel like entering an Old Western, there’s nothing dusty about their flavours or boozy cocktails. Endeavour Gin is on the menu, mixed with the specially chosen Porter’s Tonic to accentuate the traditional London-style flavours. Visitors to Granville Island could previously visit a brewery and sake maker, and with last year’s arrival of The Liberty Distillery, the Island is now home to a small-batch distillery as well. Visit for tours and tastings, as well as an ever-changing roster of drinks in their cocktail lounge. The distillery specializes in artisanal vodka, gin and whiskey recipes, and mixes things up with flavoured and barrel-aged varieties.
